Rum & Raisin Chocolate Brownies...



Its that time of the year again!! The time to be merry...to sing carols...dress up trees and front doors...revel in the beauty of nature ...the goodness of people and of course to dine well!!
Coz its not wrongly said "That one cannot feel well,sleep well or love well,if one hasn't dined well"...and that is precisely something I live and swear by...coz of course I want to sleep..err...love well!! :P :P
This was the result of one of my chocolate craving moods...and the fact that I wanted to do something for the baby's school teachers..Its her  birthday soon and I am planning a whole bunch of dessert treats for the amazing teachers at school and her friends back at our home .. 
This is simply of the easiest,simplest and quick recipes I thought of there and then.. and absolutely perfect with the twisted yummilicious addition of rum and raisin!
Perfect edible gifts for friends and of course I won't judge if you have half of it before you finish packing them .... It will be our little secret... Shhhh... 
Recipe:
Makes: 16 squares. Preparation time - 15-20 mins. Cooking time- 40 mins. 
Ingredients:
100 gm unsalted butter
1 1/2 cup granulated sugar
1/2 cup unsweetened cocoa powder
2 eggs
1 teaspoon pure vanilla extract
3/4 cup all-purpose flour
Rum 2 tbsp
Raisins a handful.
How to:
1.Heat oven to 350 degrees F or 180C.
2. Line an 8 x 8 baking ban with aluminum foil leaving excess foil hang over two opposing sides for easy removal. Grease and flour bottom and sides of the foil; set aside.
3. In medium bowl, melt butter in microwave on HIGH at 30 second intervals, stir and repeat if necessary until fully melted.
4. Whisk in sugar and cocoa. Beat in eggs and vanilla.
Add the rum.
5. Using a rubber spatula, fold in flour until flour is completely blended in cocoa.
6.Pour evenly into pan.
7. Sprinkle the raisins on top.
8. Bake for 35 to 40 minutes or until toothpick inserted in center comes out clean.
Notes:
This is a thick dense batter which may require manual spreading in the pan. A rubber or an offset spatula is recommended to easy spreading.
You can of course omit the rum and make it the plain classic way.
One can also add chopped walnuts for a walnut brownie.
Wrap some in cellophane papers and pretty ribbons or put in a jar for edible gifts this season!
